Gastronomic philosophy

Our kitchens are driven by the mission to offer sustainable and healthy food that uses local and seasonally available products while supporting local farmers and producers. The aim is to get to “zero kilometers” of distance between our produce and our kitchen.

Executive Chef: With over 25 years of culinary expertise, Panamanian Chef Jorge Jurado—El Maestro—brings a masterful blend of tradition, innovation, and artistry to Nayara Bocas del Toro. An award-winning chef, author, and mentor, he celebrates Panama’s rich flavors through sustainable, locally inspired cuisine designed to surprise and delight every guest.

COMMITED TO SUSTAINABILITY

Construction

We conducted five different environmental studies to build Nayara Bocas del Toro without harming the native mangroves and coral reefs. That's why we built the hotel on stilts and off-grid, and designed our own clean water and energy infrastructure.

Water

100% of our freshwater for drinking, bathing, and cooking is provided by harvested rainwater. We use large custom gutters that funnel rain water through downspouts and into large catchment basins that can store as much as 100,000-gallons. The water is then purified using an advanced ultraviolet purification method.

Nature

In 2022, we partnered with the locally-based Caribbean Coral Restoration to install ten environmentally friendly fish habitats or artificial reef structures. We seeded them with genetically resilient coral for faster growth and recovery, and while it’s still early, we have already seen a tremendous amount of marine life return to the bay.
